Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 (14 oz) can pinto beans, rinsed and drained
  • 1 (14 oz) can white beans, rinsed and drained
  • 1 (14 oz) can corn, rinsed and drained
  • 16 oz green salsa
  • 4 cups fat-free chicken broth

Instructions

Slow Cooker Method

Place the chicken breasts in the bottom of the slow cooker. Add beans, corn, salsa, broth, and seasonings. Stir gently to combine. Cover and cook on LOW for about 4 hours, or until the chicken is tender and fully cooked. Transfer the chicken to a plate, shred or dice it, then stir it back into the chili before serving with your favorite toppings.

Instant Pot Method

Combine all ingredients in the pressure cooker. Make sure not to exceed the max fill line (you can stir in extra broth afterward if needed). Seal the lid and cook on Manual (High Pressure) for 8 minutes. Allow natural pressure release. Remove the chicken, shred or chop, return it to the pot, and mix well before serving.

Stovetop Method

Add all ingredients to a large soup pot or Dutch oven. Bring the mixture to a gentle boil, then reduce heat and simmer for 25–30 minutes. Once the chicken is thoroughly cooked, remove it, shred or cube it, then stir it back into the chili. Serve warm.
