Slow Cooker Chuck Roast Street Tacos
Ingredients
- 2–3 lbs beef chuck roast
- 1 tbsp olive oil
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 cup beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can diced tomatoes (optional)
- Juice of 1 lime

Instructions
- Heat oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear each side for 4–5 minutes until browned.
