Ingredients

  • 1 lb beef sirloin, sliced thin (slightly freeze beforehand for easier cutting)
  • 1 tablespoon olive oil
  • 1 large green bell pepper, sliced
  • 1 large onion, sliced
  • 8 oz mushrooms, sliced (baby bella recommended)
  • 2 cloves garlic, finely chopped
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 8 slices provolone cheese, cut into strips
  • 4 cups cauliflower rice (remove excess moisture if frozen)
  • 2 tablespoons butter
  • Fresh parsley, for garnish

Instructions

  1. Warm olive oil in a large skillet over medium-high heat until hot. Add the sliced beef in a single layer (cook in batches if needed). Let it sear undisturbed for 3–4 minutes until browned and slightly crisp on the edges while remaining tender.
  2. Transfer the beef to a plate. In the same pan, cook the bell peppers, onions, and mushrooms for 5–7 minutes, stirring occasionally, until softened and lightly caramelized. Add garlic during the last minute and cook until fragrant.
  3. In another skillet, melt butter over medium heat. Add cauliflower rice and cook for 5–7 minutes until tender and lightly golden. Season with salt and pepper. Keep uncovered so moisture evaporates and texture stays fluffy.
  4. Return beef to the vegetable mixture. Add Worcestershire sauce, season with salt and pepper, and stir to combine. Spread cheese over the top, cover, and cook 1–2 minutes until melted.
  5. Serve by dividing cauliflower rice into bowls and topping with the beef mixture. Finish with fresh parsley and enjoy immediately.

Notes

Store components separately for meal prep in airtight containers for up to 4 days. The beef mixture freezes well for up to 3 months. Add fresh cheese when reheating for best results. Customize with hot sauce, banana peppers, or extra cheese as desired.
