  • 2 lbs boneless chicken breasts, cut into chunks
  • 2 zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat 1 tbsp olive oil in a skillet over medium heat.
  3. Cook chicken pieces until lightly browned, about 5–7 minutes. Remove and set aside.
  4. In a large bowl, mix zucchini, bell peppers, garlic powder, onion powder, oregano, basil, salt, and pepper.
  5. Add remaining olive oil and toss well.
  6. Spread half of the vegetables into a baking dish.
  7. Add cooked chicken on top, then pour marinara sauce evenly.
  8. Top with remaining vegetables.
