- 225g penne pasta
- 450g lean ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- 3/4 cup plain Greek yogurt (or cottage cheese)
- 1 cup shredded cheddar or mozzarella
- Salt and black pepper to taste
- 2 tablespoons fresh parsley (optional)
Instructions
- Boil salted water and cook pasta until al dente. Drain and reserve 1/2 cup pasta water.
- Heat olive oil in a skillet over medium-high heat. Cook ground beef until browned. Drain excess fat.
- Move beef to the side, sauté onion and garlic for 2–3 minutes.
- Add tomato paste and cook briefly to enhance flavor.
- Pour in beef broth, stir, and simmer until slightly thickened.
- Reduce heat and mix in Greek yogurt and cheese until smooth and creamy.
- Add reserved pasta water if needed.
- Toss cooked pasta into the sauce until coated.
- Season with salt and pepper to taste.
